When did salt become so complicated? Not long ago in most American kitchens choices were limited to either Kosher or traditional table salt. Today we can identify hundreds of options from around the globe each with its own unique characteristics. To boil it all down (pun intended!) there are two key points to know when choosing salts. How is it made? All salt comes from either evaporated salt water (sea salt) or it’s mined from the earth (rock salt). Just a Pinch salts are made with flakey, pure, naturally formed sea salt crystals. Nothing is added or taken away. How is it used? Just a Pinch products are finishing salts, not usually for all purpose cooking. In general, finishing salts go on rather than in foods. As Martha Stewart explains, the very large, coarse flakes add crunchy texture and adapt to the flavor of lots of kinds of food. It doesn’t spread the saltiness across but creates little packets of flavor and texture. A nice surprise for first time tasters!
