Sunny Lemon Keto-Friendly Chicken French
 
INGREDIENTS
·      1 1/2 pounds thin chicken breast cutlets
·      ½ cup almond flour
·      1/2 teaspoon pepper
·      3 eggs beaten
·      1/4 cup white wine 
·      2/3 cup chicken stock
·      3 cloves garlic
·      juice of 2 lemons
·      1/3 cup butter 
·      olive oil 
·      Just a Pinch Sunny Lemon Sea Salt to taste. Use sparingly.
·      additional 2 tablespoons butter
·      lemon slices for garnish, if desired
 
INSTRUCTIONS
  1. Place almond flour and pepper in one bowl, beaten eggs in another.
  2. Heat a large non-stick skillet to medium. Add the butter and olive oil.
  3. Coat each cutlet in flour. Shake off excess.
  4. Dip chicken into the egg and sauté until the chicken is cooked through.  Work in batches. Do not crowd the pan. Remove the chicken from the pan and set it aside.
  5. Sauté the garlic over low heat for 1 minute.
  6. Add wine to the pan and cook for 1-2 minutes, scraping up brown bits. Add chicken stock and lemon juice and simmer until the liquid is reduced by half.
  7. Add the remaining butter and parsley., Return the chicken to the pan for about 2 minutes, to coat in the sauce and reheat.
  8. Serve with a drizzle of the sauce over the top. Garnish with lemon slices if desired.
